Butternut Squash soup

This is a great recipe, lovely Butternut Squash soup.

Ingredients:

1Medium sized Butternut Squash
2 Carrots
1Parsnip
2 Potatoes
1Litre of stock using Kallo organic stock cubes (Chicken or Veg cubes)
1tsp Ginger
1tsp Nutmeg
1tsp Paprika
1tsp Garlic Powder
1tbsp of Caratino oil
2tbsp of Chives
Salt and pepper to season

Directions:



Chop all of the veg into small pieces. Heat the oil to a medium/High heat, add the veg and Sautee for about 4 minutes. Add the stock and spices and simmer for around 20 minutes, or until the veg is soft. Add the Chives 5 mins before end of boiling the veg. Once the veg has cooled for about 5 minutes, add to the food processor and Blitz!

Serve with Warmed bread and butter ( Gluten Free bread for me!). This soup tastes so sweet, with lovely undertones from the Parsnip and added spices. Great to digest and is full of goodness.
