Pumpkin ---Good

Hi again. Cheryl, I noticed pumpkin was on your list of good foods for AF.
Is this in the can, like pie filling? If it is fresh , how do you prepare it?

Sorry Christina, I have never heard of pumpkin in a can? I buy a whole or a quarter Butternut pumpkin from the grocer and boil it or steam it until it is VERY soft. It is delicious!
I have even mashed it in with mashed sweet potato - a good alternative to normal sweet potato.
I will keep an eye out for the pumpkin in a can though!

Yes I agree Cheryl, I find pumpkin is now my fave vegie - I eat it almost every night! I will try your suggestion mixed witht he sweet potato, sounds interesting,
