High fiber, anti-inflammatory breakfast: curried oats!

Hello!

I wanted to let you all know about a breakfast that is cheap, tasty, and healthy. It’s less sweet and more savory: curried oats!

Dry ingredients:

About ½ cup oats
1-2 tablespoons chia seeds
A big gob of peanut butter
Curry/turmeric powder to taste
Honey/brown sugar to taste

Boil some water, and add it to the dry ingredients. Stir for a few minutes to get the chia and oats hydrated. Then add the peanut butter and sweetener and stir it in and you are good to go!

Reasons this has become my daily breakfast:

Chia seeds are high in soluble fiber and high in Omega 3 fats (anti-inflammatory)
Oats are good insoluble and soluble fiber
Curry and turmeric are anti-inflammatory and speed your digestive transit time
Peanut butter is tasty with curry

I also take some miralax and vitamin c with this meal to ensure that the fiber stays well hydrated.

A word of warning: this is a LOT of fiber. I haven’t done the math. It doesn’t cause my stools to become bulky, but my transit time is such that breakfast stays in me only 24 hours. If this meal stays in you longer, it might become impacted and large.

Wow! This is an interesting recipe - not sure it's one I could face first thing in the morning. LOL ! but many thanks for sharing :)
