well NG, i have a treat for you to maybe consider making - if you don't have any allergies to the following and feel free to improvise where needed but keep it all veggie now!
1/4 red onion, chopped like if you were making salsa dip
1/4 white onion, chopped - same way
1/2 cup of grated or chopped fresh ginger
2 or 3 teeths of fresh garlic, chopped
1 raw yam or butternut squash, cut into cubes
1/2 or 3/4 bag of fresh, washed, greens mix such as kale, collard greens, turnip greens, bok choy, etc.
1 cup of cubed firm tofu
3 capfuls of olive oil for sauteeing
1 capful of seasame oil for final touch
as needed, sea salt
as needed, garlic salt (not powder)
sprinkles of tumeric
sprinkles of teka

heat up your big pot / pan
have everything cut and ready before heating your pan
add the 3 capfuls of olive oil
let it get hot in about 1 minute
add in the onions, garlic, and ginger
let that sautee for about 3 minutes
add in tofu
let that all sautee for about 2 minutes
add in the yams or butternut squash
let all that sautee for about 3 minutes
(you may need to add about 1/5 cup of water)
lower heat but not all the way down to simmer - like maybe a medium heat
add in the mixed greens
mix it all in with the above ingredients
add another 1/5 cup of water to help induce steam
cover
let everything heat up and cook for about 7 minutes covered
at this time, add in seasame oil, sea salt, garlic salt, and tumeric
stir and cook for another 3-5 minutes - once all greens have wilted and are nice and submissive/soft.

on the side, make some quinoa or couscous or barley. i suppose you can also enjoy this with brown rice.

add the quinoa or whatever grain at bottom of bowl.
spoon in some nice servings of the above greens/yams/sautee.
serve nice and hot!
enjoy.
this has kept my poops so soft.......well, i also eat lots of veggies in the day time and prunes and oatmeal......with some liberties at times......
but i love this sautee.
it does the body good.
