Thomas Multi-Grain English Muffins 8g Fiber!

My life has become a fiber quest and I get so excited when I find high fiber foods. Especially tasty high fiber foods.
I love white English Muffins, but they're an absolute empty food. Not the Multi-Grain though. Very hearty and healthy. Since my surgery, I have been eating one with a bowl of fruit each morning. They're very filling too. I put some egg and cheese on one this morning and I could barely finish it.

pumpkin chocolate chip muffins 8 gm fibre

Hi,
I have a recipe for healthy pumpkin chocolate chip (only 1/4 cups chips) muffin made with things like whole wheat flour, flax meal, bran buds etc. that are yummy (my kids like them) that have 8 grams of fibre. I eat one each day. If you want the recipe, let me know!

8 grams of Fibre Pumpkin Muffins

Recipe is from a book called Ultimate Foods for Ultimate Health

Pumpkin Chocolate chip Muffins
Wet Ingredients:
1 cup buttermilk
1 cup canned pumpkin puree (pure pumpkin)
1 cup dark brown sugar
1 egg
1/2 cup All-Bran Buds (apparently these are the only ones that work)
Dry Ingredients:
1 1/4 cups whole wheat flour
1/2 cup wheat bran
3/4 cup ground flaxseed
2 Tablespoons wheat germ
2 Tablespoons cinnamon
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup chocolate chips
Heat oven to 400 degrees. Use paper muffin liners (makes 12 large muffins)
In a large bowl mix all wet ingredients. Let stand 5 minutes. In a medium bowl using wire whisk, mix all dry ingredients. Add the wet ingredients to the dry and mix until combined.
Bake 20 - 25 minutes or until done.
Each muffin has 8 gm fibre, 6 gm protein, 6 gm fat
