You can, but boiling will destroy some of the minerals. Only 12 hrs won't extract as many elements as 24 hr simmer. If 24 hrs i am not sure if you want to use the meat if it will get too mushi. Also the meat will take up so much space in the pot that you will end up with a few cups liquid only depending on the size of your pot of course. With just 4 beef bones and a pound of chicken feet, in tje big crock pot i end up with over a galon of stock and i pour it in containers and freeze it, so i have for two three weeks.
