hehehehehe.......
can i tell you how long i've been wanting to bake veggie enchiladas!!!!! i've only made enchiladas once and that was back in college......like over 15 years ago!!! anyway....these were deliciously divine if i can say so myself!!!!!
yippee!!!!!
and very friendly to the bowels too!

I eat corn pretty regularly. It doesn't always digest completely but I have never had issues with "scraping!"

I find corn helps move things along and keep bm soft. It is one of my go to foods when my insides are feeling a little sluggish. I have never had a problem with scraping either. Popcorn, on the other hand, might be a no no. I haven't had problems, but I've read of other who have.

corn is great.
you can have it as corn on the cob.
or simple kernels with other veggies mixed in or like in some yummy creamy brown rice.
i am okay with popcorn.
just make sure to chew chew chew everything really well. with the popcorn, you don't want to eat those unpopped kernels!!!!
polenta is another wonderful way to get your corn fix.
or eating pre-made or homemade corn tortillas. yum!!!!!!
how about corn chowder?
corn is delicious :-)

have you guys ever tried dairy free ice cream? we bought some a few days ago - it's made of soy beans I think but it is SO GOOD - tastes just like real vanilla ice cream if not better! It's also way less fattening. I think it's made by one of the big soy product companies, either "so good" or another one of those companies that makes soy milk. I was so happy that it had no milk! yum.

isn't it amazing sunshine that ice cream without milk can taste great!
however, i recommend looking at the label very carefully as a lot of these non-dairy ice creams also load up with lots of heavy processed ingredients that you may as well enjoy the dairy for a more natural/organic ice cream.
but, if you take your time and really look at the labels and find one that is more organic and healthy - which there are non-dairy options - you'll be impressed too!

Gareth, I made your Seitan nuggets tonight. They were seriously delicious. Although I think I'm going to go easy on the chili oil / cayenne pepper next time...they were spiiiiiiiiiiicy. Hopefully, my AF won't punish me tomorrow.
Anyway, here's a lentil recipe I like. Lentils are a great source of fiber. This recipe comes from the Hunza, a people in Pakistan known for their longevity...
DHAL WITH LEMON AND CILANTRO
7 ounces lentils (any color--brown, black, yellow, green...I use
green)...(7 ounces works out to be about 1 cup)
1 large onion, shredded
2 tablespoons extra-virgin olive oil
3 tomatoes, chopped very small
2 tablespoons tomato paste
2-3 fresh green chilis, chopped small (I leave these out)
2 teaspoons garam masala (or curry powder)
Sea salt (optional)
2 lemons
1 bunch cilantro, chopped
Brown bread or brown rice
1. Wash the lentils well. Put them in a pan with 2 cups water, bring to a boil, and cook for about 15 minutes, until soft but not mushy.
2. In the meantime, use a heavy-bottomed pan to gently cook the onion in the olive oil, until soft and starting to turn yellow. Add the tomatoes, tomato paste, and chilis, and cook for a few minutes until soft. Add the garam masala and a little salt.
3. When the lentils are cooked, add them to the mixture and simmer for 5 minutes. Add extra tomato paste and/or water if you want the dhal to be more liquid.
4. Squeeze in the juice of 1-2 lemons to taste (I think 2 lemons is too much...half a lemon or one whole lemon is plenty)
5. Add the cilantro at the last minute and stir it in.
It's supposed to serve 2...although I get about 4 meals out of it. It tastes really good heated up as leftovers too. With brown rice, it makes a "complete protein meal" according to the book I got the recipe from.
